a fork and a slice of low-carb cheesecake on a white plate

Would you believe it’s actually rather simple to adjust a typical cheesecake recipe to make it diabetes-friendly, low-carb, and gluten-free?

A few easy modifications are all it takes to produce a low-carb cheesecake!

As a result, this dessert is ideal for sharing with friends and family. Because it contains all of the same essential ingredients, it tastes just like a regular cheesecake and it’s keto-friendly.

After all, cream cheese, eggs, sugar, lemon juice, and vanilla essence make up the filling. You can rapidly cut carbs by replacing sugar with a low-carb sweetener like erythritol.

You’ll have a rich, creamy, guilt-free dessert that tastes just like the real thing when you pour it over a flaky, scrumptious low-carb crust!

There are two basic phases to making this cheesecake. To begin, combine the dough ingredients and bake the crust. Then you simply mix together the filling ingredients before pouring it over the top, baking it, and chilling it until ready to serve!

Step 1: Start off by preheating the oven to 350 degrees Fahrenheit (180 degrees Celsius).

Step 2: Combine the almond flour, shredded coconut, and salt in a large mixing basin. Mix thoroughly.

Step 3: Gently melt the butter, then stir in the liquid Stevia and the dry ingredients.

Step 4: Mix everything together thoroughly.

Step 5: Place the dough in the springform pan and pat it down evenly.

Step 6: Bake for 10–15 minutes at 350°F, or until the crust begins to turn golden brown around the edges. Allow it to cool down completely.

Step 7: Combine the cream cheese and powdered sweetener in a large mixing basin. Then, one at a time, beat in the eggs until barely combined. Finally, carefully fold in the remaining ingredients, taking care not to overmix.

Step 8: Pour the filling over the cooled crust in the springform pan. To remove any spaces or bubbles, tap the pan against the counter.

Step 9: Bake for about 50 minutes, or until the top of the cheesecake has browned and the center jiggles slightly. Allow cooling to room temperature after removing from the oven.

Step 10: Cover and chill the cheesecake for at least 4 hours or overnight once it has cooled to room temperature.

Wrap a hot towel over the sides of the pan for one minute before slicing with a hot knife to remove it.

Now it’s time to serve your low-carb cheesecake!
