4 tablespoons granulated  Fruit Sweetener*

1 medium carrot, finely sliced or grated (60-70g) 

4 tablespoons shredded coconut (low-fat)

*Or 4 tbsp sugar (or other granulated sweeteners of choice)

Instructions:

1. In a large mixing dish, whisk together the coconut flour, water, applesauce, and vanilla extract.

2. Stir together the cinnamon, Lakanto, and shredded carrots in a mixing dish.

3. Allow dough to chill for 15 minutes.

4. In a small basin, sift the shredded coconut.

5. Start by removing the dough from the fridge after 15 minutes and roll it into 15 equal-sized cake balls. Each ball should be evenly coated in shredded coconut.

6. Store in the fridge for 4 to 5 days.

Ingredients: 

4 cup almond flour

1/3 cup coconut flour

1 tsp baking powder

half tsp salt

 2 tablespoon softened butter

a quarter cup of sweetener

2 eggs

1 cup orange zest 

2 teaspoon vanilla essence

decorations:

Mini M&Ms, nonpareils, chopped nuts, and other little items can be used as decorations (optional)

Chocolate Dip: (optional)

3 oz dark chocolate (sugar-free)

Instructions:

1. Preheat the oven to 325°F for the cookies.

2. Combine almond flour, coconut flour, baking powder, and salt in a medium mixing container.

3. In a large mixing container, start mixing cream butter and sweetener for 2 minutes, or until light and fluffy. In a separate bowl, whisk together the egg, orange zest, and vanilla extract.

4. Mix in the almond flour mixture until it forms a dough.

5. Place dough in the canister of a cookie press and cover with the plate of your choosing.

6. Place cookies on cookie pans lined with parchment paper.

(At first, this will take some practice, but if you make a mistake and wind up with a glob of dough, simply pick it up and place it back into the press.)

7. Bake cookies for 12 to 14 minutes, or until firm to the touch but not too brown around the edges. They’ll still be somewhat soft.

8. Immediately after removing the cake from the oven, add any embellishments. Allow at least 15 minutes for cooling on the pans before transferring to a wire rack to cool entirely.

9. Place a bowl over a pan of slightly simmering water for the chocolate dip (the bottom of the bowl should not touch the water). Waxed paper or parchment paper should be used to line a baking sheet.

10. Stir in the chopped chocolate until it is melted and creamy (if your chocolate is too thick for coating, add some butter or oil a teaspoon at a time until the right consistency is achieved).

11. Drop one cookie at a time, face-up, into the melted chocolate, coating the bottom. Remove the chocolate with a fork and carefully tap it against the edge of the bowl to remove any excess.

12. Set cookies on a baking sheet that has been lined with parchment paper. You have the option of dipping all of the cookies, half of them, or none at all.

Step 8: Pour the filling over the cooled crust in the springform pan. To remove any spaces or bubbles, tap the pan against the counter.

Step 9: Bake for about 50 minutes, or until the top of the cheesecake has browned and the center jiggles slightly. Allow cooling to room temperature after removing from the oven.

Step 10: Cover and chill the cheesecake for at least 4 hours or overnight once it has cooled to room temperature.

Wrap a hot towel over the sides of the pan for one minute before slicing with a hot knife to remove it.

STEP 3: Using a hand mixer, whip the egg whites until stiff peaks form. This should only take a few minutes.

STEP 4: Try and not to overmix the shredded coconut and sweetener into the egg whites with care.

STEP 5: Scoop out small parts of the cookies with a 1 tablespoon measuring spoon, shaping them into balls as you go. STEP 6: Place them on the baking tray about 1/2 inch apart; they won’t rise much, so don’t worry about leaving large gaps. STEP 7: This recipe yields around 20 cookies.

STEP 8: Bake for 17-20 minutes, or until golden brown and crisp.
